  • 1 lb Brussels Sprouts (trimmed and cut in half if large)
  • 1 lb Carrots (peeled and cut into 1-inch pieces)
  • 1/4 cup Pure Maple Syrup
  • 2 tbsp Olive Oil
  • 1 tbsp Dijon Mustard
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • Salt (to taste)
  • Freshly Ground Black Pepper (to taste)
  • Fresh thyme leaves or chopped parsley (for garnish optional)
  • Toasted pecans or walnuts (for garnish optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the trimmed and halved Brussels sprouts with the peeled and chopped carrots.
  3. Drizzle the vegetables with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat evenly.
  4. Spread the seasoned vegetables in a single layer on the baking sheet. Roast for 15-20 minutes.
  5. While the vegetables are roasting, whisk together the maple syrup, remaining olive oil, Dijon mustard, garlic powder, and smoked paprika in a small bowl.
  6. Remove the baking sheet from the oven. Pour the maple glaze over the vegetables and toss gently to coat.
  7. Return the baking sheet to the oven and continue roasting for another 10-15 minutes.
  8. Transfer the vegetables to a serving dish. Garnish with thyme or parsley, and toasted nuts if desired. Serve immediately.
