- 1 cup Mayonnaise (or vegan mayonnaise)
- 1/4 cup Dill Pickle Relish
- 1/4 cup Red Onion (finely chopped)
- 1 tablespoon Lemon Juice (fresh preferred)
- 1 tablespoon Capers (optional)
- 1 teaspoon Dijon Mustard (omit if unavailable)
- 4 pieces Brioche Buns (or whole wheat/gluten-free buns)
- 1 cup Lettuce (or mixed greens)
- 1 medium Tomato Slices (optional)
- 1 medium Onion Slices (fresh or pickled, optional)
- 1 lemon Lemon Wedges (for serving)
Instructions
- Begin by patting your cod fillets dry, removing any bones, and cutting them into manageable portions.
- Set up your assembly line with three dishes: one for the flour mixed with salt, pepper, garlic powder, paprika, and cayenne; one for the egg wash; and the last for the panko breadcrumbs.
- Dredge each cod piece in the seasoned flour, dip it into the egg wash, and coat with the crispy panko breadcrumbs.
- Lay the coated cod on a wire rack for 10-15 minutes.
- In a bowl, combine mayonnaise, dill pickle relish, red onion, lemon juice, and any optional ingredients for tartar sauce.
- In a large pot, heat vegetable oil to 350-375°F.
- Carefully add the cod fillets to the hot oil and fry in batches for 3-4 minutes on each side until golden brown.
- While the cod is frying, lightly toast your brioche buns in a skillet until warm and golden.
- Spread tartar sauce on each bun, layer in crispy fried cod, add lettuce and optional toppings.
- Enjoy your sandwiches immediately with lemon wedges.
