  • 2 large Large Eggs (or flax egg for vegan option)
  • 1/2 cup Milk (or plant-based milk)
  • 1 cup Panko Breadcrumbs (or gluten-free panko)
  • 1 cup Mayonnaise (or vegan mayonnaise)
  • 1/4 cup Dill Pickle Relish
  • 1/4 cup Red Onion (finely chopped)
  • 1 tablespoon Lemon Juice (fresh preferred)
  • 1 tablespoon Capers (optional)
  • 1 teaspoon Dijon Mustard (omit if unavailable)
  • 4 pieces Brioche Buns (or whole wheat/gluten-free buns)
  • 1 cup Lettuce (or mixed greens)
  • 1 medium Tomato Slices (optional)
  • 1 medium Onion Slices (fresh or pickled, optional)
  • 1 lemon Lemon Wedges (for serving)

Instructions

  1. Begin by patting your cod fillets dry, removing any bones, and cutting them into manageable portions.
  2. Set up your assembly line with three dishes: one for the flour mixed with salt, pepper, garlic powder, paprika, and cayenne; one for the egg wash; and the last for the panko breadcrumbs.
  3. Dredge each cod piece in the seasoned flour, dip it into the egg wash, and coat with the crispy panko breadcrumbs.
  4. Lay the coated cod on a wire rack for 10-15 minutes.
  5. In a bowl, combine mayonnaise, dill pickle relish, red onion, lemon juice, and any optional ingredients for tartar sauce.
  6. In a large pot, heat vegetable oil to 350-375°F.
  7. Carefully add the cod fillets to the hot oil and fry in batches for 3-4 minutes on each side until golden brown.
  8. While the cod is frying, lightly toast your brioche buns in a skillet until warm and golden.
  9. Spread tartar sauce on each bun, layer in crispy fried cod, add lettuce and optional toppings.
