Description
Light and golden cottage cheese chips that are crunchy and protein-packed, flavored with garlic, onion, smoked paprika, and Parmesan.
Ingredients

- 2 cups (16 oz) cottage cheese, full-fat or low-fat (small-curd preferred)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika (optional)
- 1/4 tsp freshly ground black pepper
- 1/4 tsp salt (adjust to taste)
- 1 tbsp finely chopped chives
- 1 tbsp grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone mat.
- Drain the cottage cheese in a fine-mesh sieve. Press gently to remove excess liquid, then pat dry with paper towels.
- In a bowl, stir the drained cottage cheese with garlic powder, onion powder, smoked paprika, black pepper, and salt until evenly combined.
- Use a tablespoon to portion the mixture onto the prepared sheet, spacing at least 2 inches apart. Flatten each mound with the back of the spoon into a 2–2.5 inch circle.
- Sprinkle chopped chives and/or grated Parmesan over each piece.
- Bake for 30–35 minutes until the edges turn golden brown and the chips feel firm and crisp.
- Let the chips cool completely on the baking sheet; they’ll crisp further as they cool.
