Description

Light and golden cottage cheese chips that are crunchy and protein-packed, flavored with garlic, onion, smoked paprika, and Parmesan.


Ingredients

  • 2 cups (16 oz) cottage cheese, full-fat or low-fat (small-curd preferred)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 tbsp finely chopped chives
  • 1 tbsp grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Drain the cottage cheese in a fine-mesh sieve. Press gently to remove excess liquid, then pat dry with paper towels.
  3. In a bowl, stir the drained cottage cheese with garlic powder, onion powder, smoked paprika, black pepper, and salt until evenly combined.
  4. Use a tablespoon to portion the mixture onto the prepared sheet, spacing at least 2 inches apart. Flatten each mound with the back of the spoon into a 2–2.5 inch circle.
  5. Sprinkle chopped chives and/or grated Parmesan over each piece.
  6. Bake for 30–35 minutes until the edges turn golden brown and the chips feel firm and crisp.
  7. Let the chips cool completely on the baking sheet; they’ll crisp further as they cool.
