  • 1 tbsp Honey (Or 1 tsp sugar for sweetness)
  • 6 cloves Garlic, minced (Essential for flavor)
  • 2 tbsp Fresh Ginger, finely grated (Imparts warmth and zest)
  • 1 tbsp Sake (Or dry sherry or vermouth if unavailable)
  • 450 g Skinless Boneless Chicken Thighs (Main protein source)
  • 30 g Potato Starch (Or cornstarch or rice flour for similar texture)
  • 30 g All-Purpose Flour (Adds texture for crispiness)
  • Sunflower Oil (Neutral oil with high smoke point)

Instructions

  1. Start by cutting the skinless boneless chicken thighs into small, even pieces.
  2. In a bowl, mix together the minced garlic, honey, dark soy sauce, grated ginger, and sake. Add the chicken pieces, coating them well. Allow it to marinate for at least 1 hour; for best results, let it sit for up to 3 hours in the refrigerator.
  3. Before cooking, let the marinated chicken come to room temperature for 30 minutes.
  4. In a separate bowl, combine the potato starch and all-purpose flour.
  5. Just before frying, thoroughly coat each marinated chicken piece in the potato starch and flour mixture.
  6. In a deep pot, heat sunflower oil to 160-165°C (320-329°F).
  7. Carefully add the coated chicken pieces in batches to the hot oil. Fry for about 90 seconds, then transfer to a wire rack to drain excess oil.
  8. Increase the oil temperature to 190°C (375°F) and fry the chicken for an additional 45 seconds to 1 minute until each piece is golden brown and crispy.
  9. Use a thermometer to ensure the chicken has reached an internal temperature of 75°C (165°F) for safe eating.
