Crispy on the outside and tender on the inside, these Buttermilk Belgian Waffles are perfect for brunch or a holiday breakfast.

- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs, separated
- 2 cups buttermilk
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your waffle iron according to the manufacturer’s directions. Lightly oil or spray just before pouring batter.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk egg yolks with buttermilk, oil (or melted butter), and vanilla until smooth.
- Pour the wet mixture into the dry mix. Stir gently until just combined — small lumps are okay. Do not overmix.
- In a clean, dry bowl, beat the egg whites on medium-high speed until stiff peaks form.
- Fold the beaten egg whites gently into the batter with a spatula.
- Lightly grease the hot waffle iron. Pour the recommended amount of batter and spread slightly.
- Close the lid and cook until waffles are deep golden and crisp, typically 4–6 minutes.
- Transfer waffles to a baking sheet in a single layer and keep warm in a low oven.
- Repeat with remaining batter.
