  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s directions. Lightly oil or spray just before pouring batter.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk egg yolks with buttermilk, oil (or melted butter), and vanilla until smooth.
  4. Pour the wet mixture into the dry mix. Stir gently until just combined — small lumps are okay. Do not overmix.
  5. In a clean, dry bowl, beat the egg whites on medium-high speed until stiff peaks form.
  6. Fold the beaten egg whites gently into the batter with a spatula.
  7. Lightly grease the hot waffle iron. Pour the recommended amount of batter and spread slightly.
  8. Close the lid and cook until waffles are deep golden and crisp, typically 4–6 minutes.
  9. Transfer waffles to a baking sheet in a single layer and keep warm in a low oven.
  10. Repeat with remaining batter.
