- ½ cup finely grated Parmesan cheese (about 50g)
- ¾ cup panko breadcrumbs (about 75g)
- 3 tablespoons extra virgin olive oil (45ml)
- 1 teaspoon garlic powder
- ¾ teaspoon salt (preferably flaky sea salt)
- ¼ teaspoon freshly ground black pepper
Instructions
- Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly grease it.
- Snap off the woody ends of the asparagus (about 1-2 inches from the bottom) and pat dry with a towel to remove excess moisture.
- In a large bowl, toss the asparagus with olive oil, garlic powder, salt, and black pepper until evenly coated.
- In a separate bowl, combine panko breadcrumbs and finely grated Parmesan cheese, mixing well.
- Roll each asparagus spear in the breadcrumb-Parmesan mixture, pressing lightly so the coating sticks. Arrange the coated fries in a single layer on the baking sheet.
- Bake for 12-15 minutes until the coating is golden and asparagus is tender but still slightly crisp. Flip halfway through baking for even browning.
- Optional: For extra crunch, broil for an additional 2-3 minutes, watching closely to avoid burning.
- Serve immediately while hot and crispy, optionally with garlic aioli or a squeeze of fresh lemon.
