Description
Delicious Crèmeschnitte, a classic vanilla slice filled with rich custard and layers of flaky puff pastry.
Ingredients

- 1 sheet puff pastry (ensure it’s fully thawed for easy handling)
- 240 mL whole milk
- 4 large egg yolks
- 100 grams granulated sugar
- 28 grams salted butter
- 2 tsp vanilla bean paste
- 8 grams gelatin
- 30 mL cold water
- 360 mL heavy whipping cream
- 40 grams powdered sugar
Instructions
- Thaw the puff pastry in the fridge overnight or at room temperature for a couple of hours.
- Preheat your oven to 425°F (220°C) for baking the pastry.
- Warm the milk in a pot over medium-low heat until it begins to simmer.
- In a medium bowl, whisk together the egg yolks and granulated sugar until well combined.
- Remove the milk from heat and slowly add half of it to the egg mixture while whisking.
- Pour the egg mixture back into the saucepan with the remaining milk and cook on low heat until thickened.
- Transfer the custard to a bowl and mix in the salted butter and vanilla bean paste.
- Dissolve the gelatin in cold water and add it to your custard mixture.
- Cover the custard with plastic wrap and refrigerate for about 2 hours.
- Flatten the puff pastry on a floured surface and bake for 10 minutes, then reduce temperature and bake for more 10 minutes.
- Once cooled, slice the puff pastry in half horizontally.
- Break the top layer of puff pastry into small pieces for garnish.
- In a mixing bowl, sift powdered sugar over heavy whipping cream and whip to stiff peaks.
- Whisk the chilled custard until smooth and fold in the whipped cream gradually.
- Spread the custard mixture on the bottom half of the puff pastry and sprinkle crushed pastry pieces on top.
- Refrigerate the assembled Crèmeschnitte for at least 4 hours before serving.
- Dust with powdered sugar just before serving for an elegant finish.
