Delicious Cremeschnitte: 8 Layers of Blissful Cream

Description

Delicious Crèmeschnitte, a classic vanilla slice filled with rich custard and layers of flaky puff pastry.


Ingredients

Scale
  • 1 sheet puff pastry (ensure it’s fully thawed for easy handling)
  • 240 mL whole milk
  • 4 large egg yolks
  • 100 grams granulated sugar
  • 28 grams salted butter
  • 2 tsp vanilla bean paste
  • 8 grams gelatin
  • 30 mL cold water
  • 360 mL heavy whipping cream
  • 40 grams powdered sugar

Instructions

  1. Thaw the puff pastry in the fridge overnight or at room temperature for a couple of hours.
  2. Preheat your oven to 425°F (220°C) for baking the pastry.
  3. Warm the milk in a pot over medium-low heat until it begins to simmer.
  4. In a medium bowl, whisk together the egg yolks and granulated sugar until well combined.
  5. Remove the milk from heat and slowly add half of it to the egg mixture while whisking.
  6. Pour the egg mixture back into the saucepan with the remaining milk and cook on low heat until thickened.
  7. Transfer the custard to a bowl and mix in the salted butter and vanilla bean paste.
  8. Dissolve the gelatin in cold water and add it to your custard mixture.
  9. Cover the custard with plastic wrap and refrigerate for about 2 hours.
  10. Flatten the puff pastry on a floured surface and bake for 10 minutes, then reduce temperature and bake for more 10 minutes.
  11. Once cooled, slice the puff pastry in half horizontally.
  12. Break the top layer of puff pastry into small pieces for garnish.
  13. In a mixing bowl, sift powdered sugar over heavy whipping cream and whip to stiff peaks.
  14. Whisk the chilled custard until smooth and fold in the whipped cream gradually.
  15. Spread the custard mixture on the bottom half of the puff pastry and sprinkle crushed pastry pieces on top.
  16. Refrigerate the assembled Crèmeschnitte for at least 4 hours before serving.
  17. Dust with powdered sugar just before serving for an elegant finish.
