Instructions
- In a large mixing bowl, combine ground beef, egg, breadcrumbs, salt, pepper, and grated shallot. Gently mix until just combined. Shape into four patties about ¾ inch thick.
- Heat a skillet over medium-high heat and add olive oil and unsalted butter. Sear the patties for approximately 5 minutes on each side until golden-brown and cooked to desired doneness.
- Reduce the heat and add diced shallots and minced garlic to the drippings. Sauté for about 1 minute until shallots are translucent.
- Stir in yellow mustard, flour, salt, and pepper. Cook for another minute until the mixture resembles a paste.
- Pour whiskey into the skillet, deglazing it and scraping up any browned bits. Simmer for about 3 minutes until it thickens slightly.
- Add beef broth and bring to a gentle boil. Slowly incorporate the cream, stirring until fully combined and sauce is velvety.
- Return the seared hamburgers to the skillet, nestling into the sauce and simmering for another 5 minutes to meld flavors.
- Remove from heat, garnish with chopped chives and serve immediately.
