- 2 slices sturdy white or sourdough bread (whole wheat or multigrain optional)
- 1 cup packed fresh baby spinach
- ½ cup crumbled feta cheese (about 75g)
- ½ cup shredded mozzarella cheese (about 50g)
- 2 tablespoons cream cheese (about 30g), full-fat
- 2 tablespoons unsalted butter (about 28g)
- 1 small clove garlic, minced (optional)
- Black pepper, to taste
- Pinch of salt
- 1 teaspoon fresh lemon juice (optional)
Instructions
- Heat 1 teaspoon butter or olive oil in a non-stick skillet over medium heat. Add fresh spinach and minced garlic (if using). Cook, stirring, until spinach wilts and releases moisture, about 2-3 minutes. Season lightly with black pepper and a pinch of salt. Remove from heat and let cool slightly.
- In a small mixing bowl, combine crumbled feta, shredded mozzarella, cream cheese, and cooked spinach mixture. Add lemon juice if available. Stir until evenly mixed and creamy.
- Butter one side of each bread slice generously. Place one slice, butter-side down, on the skillet. Spread the spinach and feta mixture evenly over the bread. Top with the second slice, butter-side up.
- Cook over medium-low heat for about 4-5 minutes, pressing lightly with a spatula or grill press. After about 3 minutes, check the underside for a golden brown crust. Flip carefully and cook the other side until golden and cheese is melted, about 2 more minutes. Lower heat if bread browns too fast.
- Remove sandwich from skillet and let cool for a minute. Slice diagonally and serve warm.
