Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 cans white beans (cannellini or Great Northern), about 3 cups drained
  • 1 can (4 oz) green chilies (Hatch chilies optional)
  • 3 cups chicken broth (low sodium preferred)
  • 4 oz cream cheese (full-fat)
  • ½ cup sour cream (regular or light)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped (optional)
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt and black pepper to taste
  • Pinch of cayenne pepper (optional)
  • 1 tbsp olive oil
  • Fresh cilantro (optional, for garnish)
  • Optional toppings: shredded cheese, avocado slices, lime wedges, tortilla chips

Instructions

  1. Prep your ingredients: chop onion, garlic, and jalapeño; drain and rinse white beans.
  2. Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and jalapeño until softened and fragrant, about 4-5 minutes.
  3. Add sautéed mixture to the crockpot. Add chicken, drained beans, green chilies, chicken broth, cumin, chili powder, smoked paprika, oregano, salt, pepper, and cayenne. Stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender enough to shred.
  5. Remove chicken and shred with two forks. Return shredded chicken to crockpot and stir.
  6. Stir in cream cheese (cut into cubes) and sour cream until melted and creamy.
  7. Taste and adjust seasoning if needed. Serve hot with desired toppings such as cilantro, shredded cheese, avocado, lime wedges, or tortilla chips.
