Creamy Southern coleslaw with a tangy apple cider vinegar dressing.
Ingredients

- 4 cups green cabbage, finely shredded
- 1 cup carrots, shredded
- ½ cup mayonnaise
- 3 tablespoons apple cider vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon Dijon mustard
- ½ teaspoon celery seed
- Salt and pepper to taste
- Optional: chopped fresh parsley or green onions
Instructions
- Rinse the cabbage and carrots well. Remove any damaged outer leaves from the cabbage. Finely shred about 4 cups of green cabbage and 1 cup of carrots.
- In a medium bowl, whisk together ½ cup mayonnaise, 3 tablespoons apple cider vinegar, 1 tablespoon granulated sugar, 1 teaspoon Dijon mustard, and ½ teaspoon celery seed. Add salt and pepper to taste.
- Pour the dressing over the shredded cabbage and carrots. Toss gently until every shred is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably an hour.
- Before serving, give the slaw a quick stir and adjust seasoning if needed. Fold in optional parsley or green onions if desired.

- This coleslaw pairs well with barbecue and fried chicken.
