Creamy Southern coleslaw with a tangy apple cider vinegar dressing.


Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, shredded
  • ½ cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon celery seed
  • Salt and pepper to taste
  • Optional: chopped fresh parsley or green onions

Instructions

  1. Rinse the cabbage and carrots well. Remove any damaged outer leaves from the cabbage. Finely shred about 4 cups of green cabbage and 1 cup of carrots.
  2. In a medium bowl, whisk together ½ cup mayonnaise, 3 tablespoons apple cider vinegar, 1 tablespoon granulated sugar, 1 teaspoon Dijon mustard, and ½ teaspoon celery seed. Add salt and pepper to taste.
  3. Pour the dressing over the shredded cabbage and carrots. Toss gently until every shred is evenly coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably an hour.
  5. Before serving, give the slaw a quick stir and adjust seasoning if needed. Fold in optional parsley or green onions if desired.
