- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can petite diced tomatoes
- 8 oz ditalini pasta
- 1 teaspoon Italian seasoning
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy whipping cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Italian sausage in a large pot over medium heat, breaking it up until no longer pink. Drain excess fat.
- Add the diced onion and sauté for 2 to 3 minutes until softened.
- Stir in the garlic and Italian seasoning and cook for about 1 minute until fragrant.
- Pour in the chicken broth, diced tomatoes (with juices), and ditalini pasta.
- Bring to a boil, then lower heat and simmer for 6 to 8 minutes until the pasta is al dente.
- Reduce heat further and stir in the softened cream cheese, Parmesan, and heavy cream until melted and creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.

- For a spicier soup, add crushed red pepper flakes or use hot Italian sausage.
- To freeze, omit pasta and add it when reheating.
