  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 8 oz ditalini pasta
  • 1 teaspoon Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy whipping cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Italian sausage in a large pot over medium heat, breaking it up until no longer pink. Drain excess fat.
  2. Add the diced onion and sauté for 2 to 3 minutes until softened.
  3. Stir in the garlic and Italian seasoning and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth, diced tomatoes (with juices), and ditalini pasta.
  5. Bring to a boil, then lower heat and simmer for 6 to 8 minutes until the pasta is al dente.
  6. Reduce heat further and stir in the softened cream cheese, Parmesan, and heavy cream until melted and creamy.
  7. Season with salt and pepper to taste.
