A rich and comforting creamy potato sausage chowder, perfect for a hearty meal on a cool day. This easy one-pot recipe features savory sausage, tender potatoes, and a luxurious creamy broth.

- 1 tbsp olive oil
- 400 g sausage (any flavor, casing removed if applicable)
- 1 onion, chopped
- 2 stalks celery, sliced
- 2 carrots, sliced
- 2 cloves garlic, minced
- ½ tsp dried thyme
- 3 tbsp all-purpose flour
- 1 litre (4 cups) chicken or vegetable stock
- 2 bay leaves
- 100 g (½ cup) wild rice (optional)
- 3 medium potatoes, peeled and cut into chunks
- 375 ml (1½ cups) single/light cream or half-and-half
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a soup pot over medium heat. Add sausage, break it up, and cook until browned. Remove sausage and set aside.
- Add onion, celery, and carrots to the same pot. Cook over low heat for 10 minutes until softened.
- Stir in garlic and thyme, cook for 30 seconds.
- Sprinkle flour over vegetables and stir for 1-2 minutes to create a roux.
- Slowly pour in a little stock, stirring to combine with the roux, then add the remaining stock.
- Add bay leaves and wild rice (if using) and bring to a gentle simmer. Cook for 30 minutes.
- Add potato chunks and simmer for another 15 minutes, or until potatoes and rice are tender.
- Gently stir in the cream and warm through without boiling.
- Season with salt and pepper to taste, and remove bay leaves.
- Serve hot, garnished with fresh parsley.
Notes
- For a gluten-free version, substitute cornstarch for flour.
- For a dairy-free chowder, use oat or soy cream.
- Leftover cooked chicken can be used instead of sausage.
- Store leftovers in an airtight container in the refrigerator for 2-3 days.
- Reheat gently on the stovetop over low heat. Avoid freezing as potatoes can become grainy.
