A rich and comforting creamy potato sausage chowder, perfect for a hearty meal on a cool day. This easy one-pot recipe features savory sausage, tender potatoes, and a luxurious creamy broth.


Ingredients

  • 1 tbsp olive oil
  • 400 g sausage (any flavor, casing removed if applicable)
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • ½ tsp dried thyme
  • 3 tbsp all-purpose flour
  • 1 litre (4 cups) chicken or vegetable stock
  • 2 bay leaves
  • 100 g (½ cup) wild rice (optional)
  • 3 medium potatoes, peeled and cut into chunks
  • 375 ml (1½ cups) single/light cream or half-and-half
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a soup pot over medium heat. Add sausage, break it up, and cook until browned. Remove sausage and set aside.
  2. Add onion, celery, and carrots to the same pot. Cook over low heat for 10 minutes until softened.
  3. Stir in garlic and thyme, cook for 30 seconds.
  4. Sprinkle flour over vegetables and stir for 1-2 minutes to create a roux.
  5. Slowly pour in a little stock, stirring to combine with the roux, then add the remaining stock.
  6. Add bay leaves and wild rice (if using) and bring to a gentle simmer. Cook for 30 minutes.
  7. Add potato chunks and simmer for another 15 minutes, or until potatoes and rice are tender.
  8. Gently stir in the cream and warm through without boiling.
  9. Season with salt and pepper to taste, and remove bay leaves.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a gluten-free version, substitute cornstarch for flour.
  • For a dairy-free chowder, use oat or soy cream.
  • Leftover cooked chicken can be used instead of sausage.
  • Store leftovers in an airtight container in the refrigerator for 2-3 days.
  • Reheat gently on the stovetop over low heat. Avoid freezing as potatoes can become grainy.
