A delicious and creamy potato salad that is perfect for summer gatherings and barbecues.
Ingredients

- 2 pounds of potatoes, peeled and diced
- 1 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1/2 cup of chopped celery
- 1/2 cup of chopped red onion
- 1/4 cup of chopped pickles
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and let them cool.
- In a large bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
- Add the cooled potatoes, celery, red onion, pickles, and hard-boiled eggs to the bowl.
- Gently fold the ingredients together until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
