Description
A quick and easy one-pan meal featuring tender chicken strips coated in a rich, tangy pepperoncini cream sauce. This dish offers bold flavors and comes together in about 30 minutes, making it perfect for a weeknight dinner.
Ingredients
- 2 tbsp butter
- 2 lb chicken, cut into thin strips
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 white onion, diced
- 2 tbsp garlic, diced
- ½ cup chicken stock
- ½ cup roasted red pepper, drained and sliced
- 1 cup heavy cream
- ½ cup parmesan cheese, shredded
- 1 tbsp Italian seasoning
- ½ cup pepperoncini peppers, drained (sliced, rings, or whole)
Instructions
- Cut chicken into thin strips and season with salt and pepper.
- Melt butter in a large skillet over medium-high heat. Add chicken and cook until browned, about 8 minutes. Remove chicken from skillet and set aside.
- Add diced onion and garlic to the same skillet. Cook for about 5 minutes until softened and fragrant.
- Pour in chicken stock and roasted red peppers. Reduce the mixture by half, about 5 minutes.
- Turn off heat. Whisk in heavy cream and parmesan cheese until smooth.
- Return heat to medium-high. Stir in Italian seasoning and pepperoncini peppers.
- Return chicken to the skillet. Simmer until chicken is cooked through and sauce thickens. Thin with more chicken stock if needed.
- Serve immediately.

- For a dairy-free option, use coconut cream and omit or substitute parmesan cheese.
- For a vegetarian version, replace chicken with tofu or a plant-based substitute and use vegetable broth.
- Adjust spice level by using mild or hot pepperoncini peppers.
