- 1 tablespoon olive oil or butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups cooked shredded chicken
- 2 cups baby spinach
- Salt and black pepper, to taste
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic. Sauté for 3–4 minutes until soft and fragrant.
- Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 2 more minutes.
- Pour in chicken broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
- Lower the heat and add heavy cream while stirring. Stir in Parmesan cheese until melted and combined.
- Add shredded chicken and baby spinach. Cook for 5 more minutes, or until spinach wilts and chicken is heated through.
- Season with salt and black pepper to taste. Serve hot, optionally garnished with more Parmesan or fresh basil.
