- 1 lb ground chicken
- 1/3 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 large egg
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 1 cup fresh spinach
- 1/4 cup grated parmesan (for sauce finish)
- 1/4 cup fresh basil (chopped)
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- In a bowl, mix ground chicken, breadcrumbs, parmesan, egg, garlic powder, onion powder, salt, and pepper until just combined.
- Shape into 1 to 1.5 inch meatballs.
- Heat olive oil and butter in a skillet over medium heat. Sear meatballs until golden on all sides. Remove and set aside.
- In the same pan, sauté sun-dried tomatoes and garlic for 1–2 minutes.
- Deglaze with chicken broth, then stir in heavy cream. Simmer for 2–3 minutes.
- Add meatballs back into the skillet. Simmer for 8–10 minutes until cooked through and sauce is creamy.
- Stir in spinach until wilted. Add parmesan and basil. Serve hot with pasta, rice, or bread.
