Creamy Keto Chicken Pot Pie Soup That Warms Your Soul

- 2 Tbsp butter
- ½ cup onion, diced
- 2 cloves garlic, minced
- 1 cup celery, sliced
- 1 cup carrots, diced
- 2 cups cauliflower florets, chopped small
- 4 cups chicken broth
- 1½ cups cooked shredded chicken
- 1 tsp dried thyme
- ½ tsp dried rosemary
- ½ cup heavy cream
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, melt 2 tablespoons of butter until bubbly. Add ½ cup of diced onion, 2 minced cloves of garlic, 1 cup of sliced celery, and 1 cup of diced carrots. Sauté for 5–6 minutes until the onions are translucent and the vegetables are tender.
- Incorporate 2 cups of chopped cauliflower florets and 4 cups of chicken broth into the pot. Mix in 1½ cups of cooked shredded chicken, 1 teaspoon of dried thyme, ½ teaspoon of dried rosemary, along with salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- After simmering, stir in ½ cup of heavy cream. Heat on low for an additional 2–3 minutes until warmed through and creamy. Do not let it boil.
- Taste and adjust seasoning with more salt and pepper if needed. Ladle soup into bowls and garnish with fresh parsley. Serve hot.
