Ingredients

  • 2 Tbsp butter
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup celery, sliced
  • 1 cup carrots, diced
  • 2 cups cauliflower florets, chopped small
  • 4 cups chicken broth
  • 1½ cups cooked shredded chicken
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • ½ cup heavy cream
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, melt 2 tablespoons of butter until bubbly. Add ½ cup of diced onion, 2 minced cloves of garlic, 1 cup of sliced celery, and 1 cup of diced carrots. Sauté for 5–6 minutes until the onions are translucent and the vegetables are tender.
  2. Incorporate 2 cups of chopped cauliflower florets and 4 cups of chicken broth into the pot. Mix in 1½ cups of cooked shredded chicken, 1 teaspoon of dried thyme, ½ teaspoon of dried rosemary, along with salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  3. After simmering, stir in ½ cup of heavy cream. Heat on low for an additional 2–3 minutes until warmed through and creamy. Do not let it boil.
  4. Taste and adjust seasoning with more salt and pepper if needed. Ladle soup into bowls and garnish with fresh parsley. Serve hot.
