  • 1 lb Boneless Skinless Chicken Breasts (Cut into cubes)
  • 9 oz Refrigerated Cheese Tortellini (Use gluten-free if needed)
  • 1/2 cup Sun-Dried Tomatoes (Adds tangy sweetness)
  • 2 cups Fresh Spinach (Wilt just before serving)

Instructions

  1. Heat a skillet over medium-high heat and add olive oil. Add cubed chicken, seasoned with kosher salt and black pepper, and cook until golden brown, about 6–8 minutes. Set aside.
  2. In the same skillet, reduce heat to medium, add unsalted butter, and let it melt slowly.
  3. Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the heavy cream, mixing until smooth to create a creamy sauce.
  5. Add the cowboy butter to the skillet and simmer for about 3-4 minutes to thicken the sauce.
  6. Return the cooked chicken to the skillet along with the cheese tortellini and stir gently. Cook for an additional 5-7 minutes until the tortellini is tender.
  7. Fold in sun-dried tomatoes and fresh spinach, letting the spinach wilt just before serving. Garnish with Parmesan cheese and red pepper flakes if desired.
