Instructions
- Heat a skillet over medium-high heat and add olive oil. Add cubed chicken, seasoned with kosher salt and black pepper, and cook until golden brown, about 6–8 minutes. Set aside.
- In the same skillet, reduce heat to medium, add unsalted butter, and let it melt slowly.
- Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the heavy cream, mixing until smooth to create a creamy sauce.
- Add the cowboy butter to the skillet and simmer for about 3-4 minutes to thicken the sauce.
- Return the cooked chicken to the skillet along with the cheese tortellini and stir gently. Cook for an additional 5-7 minutes until the tortellini is tender.
- Fold in sun-dried tomatoes and fresh spinach, letting the spinach wilt just before serving. Garnish with Parmesan cheese and red pepper flakes if desired.
