Description

Ingredients

  • 1 can (400g / 14 oz sweetened condensed milk)
  • ½ cup fresh lemon juice (about 23 lemons)
  • 1 tbsp lemon zest
  • 3 large egg yolks
  • ½ cup heavy cream
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Prepare the Crust
  2. Preheat oven to 350°F (175°C).
  3. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  4. Press firmly into the bottom and sides of a 9-inch pie dish.
  5. Bake for 8–10 minutes, then let cool.
  6. Make the Lemon Filling
  7. In a mixing bowl, whisk together:
  8. Sweetened condensed milk
  9. Lemon juice
  10. Lemon zest
  11. Egg yolks
  12. Mix until smooth and slightly thickened.
  13. Stir in the heavy cream until fully combined.
  14. Bake the Pie
  15. Pour filling into the cooled crust.
  16. Bake for 12–15 minutes, until the center is just set (slightly jiggly).
  17. Remove and let cool at room temperature.
  18. Chill
  19. Refrigerate for at least 3–4 hours, preferably overnight for best texture.
  20. Make the Whipped Topping
  21. Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  22. Spread or pipe over the chilled pie.

  25. Garnish with extra lemon zest or thin lemon slices if desired.
