- 1.5 cups Eggnog
- 1 cup Sugar
- 2 tablespoons Cornstarch
- 0.5 teaspoon Vanilla Extract
- 0.25 teaspoon Ground Cinnamon
- 0.25 teaspoon Ground Nutmeg
- 2 tablespoons Unsalted Butter
- 2 tablespoons Dark Rum (optional)
- 1 package (3 oz) Powdered Pectin (optional)
Instructions
- In a medium saucepan, pour in the eggnog and whisk in the cornstarch until fully dissolved. Stir in the sugar, cinnamon, and nutmeg, heating over medium heat. Continue stirring until the mixture begins to simmer and thicken slightly, about 5-7 minutes.
- Once thickened, lower the heat to medium-low and add the cubed butter. Stir until the butter melts and is completely incorporated. Add the vanilla extract and dark rum, if using, cooking for another 2 minutes to combine flavors.
- For a firmer jam, sprinkle in the powdered pectin while whisking continuously to avoid clumps. Allow the jam to cook for another 1-2 minutes until it thickens further.
- Remove the saucepan from heat and let the eggnog jam cool for 5-10 minutes. Once it has cooled slightly, pour the jam into sterilized jars. Seal them tightly and refrigerate for later enjoyment.
