- 2 tablespoons Olive oil
- 1 medium Onion
- 2 cloves Garlic
- 2 medium Carrots
- 2 stalks Celery
- 4 medium Potatoes
- 1 pound Boneless, skinless chicken breasts or thighs
- 4 cups Chicken broth
- 1 teaspoon Dried thyme
- 1 tablespoon Dried parsley
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 cup Milk or half-and-half
- 2 tablespoons Fresh parsley
Instructions
- Warm olive oil in a large pot over medium heat. Toss in onion, garlic, carrots, and celery, sautéing for about 4–5 minutes until softened.
- Add the diced chicken to the pot. Season with salt, pepper, and paprika (if using). Cook until lightly browned, about 5 minutes.
- Stir in the cubed potatoes, dried thyme, and parsley. Pour in the chicken broth and bring to a boil.
- Reduce the heat to low. Cover and let it simmer for 20–25 minutes, until the potatoes are tender and the chicken is cooked.
- Gently stir in the milk or half-and-half. Warm for another 2–3 minutes without boiling.
- Scoop the soup into bowls, garnishing with fresh parsley. Serve hot.
