Ingredients

  • 2 large chicken breasts or thighs (about 1 lb / 450g)
  • 3 medium poblano peppers, roasted and peeled
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups (960 ml) low sodium chicken broth
  • 1/2 cup (120 ml) full-fat sour cream
  • 1 cup (100 g) shredded Monterey Jack or Pepper Jack cheese
  • 1 teaspoon cumin
  • 2 tablespoons olive oil or avocado oil
  • Salt and freshly ground black pepper, to taste
  • A handful of fresh cilantro, chopped
  • Optional: lime juice, extra sour cream, crushed tortilla chips

Instructions

  1. Roast the poblanos directly on a gas burner or under the oven broiler, turning every few minutes until skins are charred and blistered (7-10 minutes). Place in a bowl and cover with plastic wrap for 10 minutes to steam.
  2. Peel off the charred skin, remove seeds and stems, then roughly chop the poblanos.
  3. Heat 1 tablespoon of oil in a large pot over medium heat. Season chicken with salt and pepper and cook until just done (10-12 minutes). Remove and shred with two forks.
  4. Add remaining oil to the pot and sauté diced onion and garlic until soft and fragrant (3-4 minutes).
  5. Blend the chopped poblanos until smooth using a blender or immersion blender.
  6. Stir cumin into the poblano puree, then add chicken broth and bring to a gentle simmer.
  7. Return shredded chicken to the pot and simmer for 10 minutes to blend flavors.
  8. Lower heat and stir in sour cream and shredded cheese until melted and creamy (about 3 minutes).
  9. Adjust seasoning with salt and pepper. Serve garnished with chopped cilantro and optional lime juice or extra sour cream.
