- 2 large chicken breasts or thighs (about 1 lb / 450g)
- 3 medium poblano peppers, roasted and peeled
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups (960 ml) low sodium chicken broth
- 1/2 cup (120 ml) full-fat sour cream
- 1 cup (100 g) shredded Monterey Jack or Pepper Jack cheese
- 1 teaspoon cumin
- 2 tablespoons olive oil or avocado oil
- Salt and freshly ground black pepper, to taste
- A handful of fresh cilantro, chopped
- Optional: lime juice, extra sour cream, crushed tortilla chips
Instructions
- Roast the poblanos directly on a gas burner or under the oven broiler, turning every few minutes until skins are charred and blistered (7-10 minutes). Place in a bowl and cover with plastic wrap for 10 minutes to steam.
- Peel off the charred skin, remove seeds and stems, then roughly chop the poblanos.
- Heat 1 tablespoon of oil in a large pot over medium heat. Season chicken with salt and pepper and cook until just done (10-12 minutes). Remove and shred with two forks.
- Add remaining oil to the pot and sauté diced onion and garlic until soft and fragrant (3-4 minutes).
- Blend the chopped poblanos until smooth using a blender or immersion blender.
- Stir cumin into the poblano puree, then add chicken broth and bring to a gentle simmer.
- Return shredded chicken to the pot and simmer for 10 minutes to blend flavors.
- Lower heat and stir in sour cream and shredded cheese until melted and creamy (about 3 minutes).
- Adjust seasoning with salt and pepper. Serve garnished with chopped cilantro and optional lime juice or extra sour cream.
