- 8 oz pasta (fettuccine or penne recommended)
- 2 chicken fillets, diced into 1-inch pieces
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves garlic, finely minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente, about 1 minute less than package directions. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a skillet over medium-high heat. Add diced chicken and cook until golden brown, about 3-4 minutes per side. Add minced garlic during the last 30 seconds until fragrant.
- Reduce skillet heat to medium-low. Pour in heavy cream and simmer gently for 2 minutes until slightly thickened.
- Gradually stir in Parmesan cheese until melted and smooth, stirring constantly. Add reserved pasta water a tablespoon at a time if the sauce is too thick.
- Add the drained pasta to the skillet with the sauce. Toss to coat evenly and let it mingle for about a minute.
- Season with salt and pepper to taste. Serve hot, optionally topped with extra Parmesan and fresh parsley.
