- 4 large russet potatoes, peeled and diced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 4 cups chicken broth (or vegetable broth for vegetarian)
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt to taste (start with 1 teaspoon)
- Freshly ground black pepper to taste
- 2 green onions, thinly sliced (for garnish)
- 1/2 cup bacon bits (optional)
Instructions
- Melt the butter in a large heavy-bottomed pot over medium heat. While melting, dice potatoes and onion.
- Add diced onion to melted butter and cook until soft and translucent, about 5-7 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over butter, onions, and garlic. Stir constantly for 2-3 minutes until it bubbles and smells nutty without browning.
- Slowly whisk in chicken broth to avoid lumps, then add diced potatoes. Bring to a simmer, reduce heat to medium-low, cover, and cook for 10 minutes until potatoes are tender.
- Stir in Cajun seasoning, smoked paprika, salt, and pepper. Remove half the soup and puree using an immersion blender or regular blender. Return blended soup to pot, stir in milk and heavy cream, and heat gently for 2-3 minutes without boiling.
