Creamy Air Fryer Stuffed Chicken Breast Recipe with Spinach and Cheese

- 2 large boneless, skinless chicken breasts (about 1 lb / 450g)
- 2 cups fresh spinach (about 60g)
- 4 oz cream cheese, softened (115g)
- ½ cup shredded mozzarella cheese (about 50g)
- 2 cloves garlic, minced
- 1 tablespoon olive oil (15ml)
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika (optional)
Instructions
- Preheat your air fryer to 375°F (190°C), about 3-5 minutes.
- Using a sharp knife, slice a horizontal pocket into each chicken breast without cutting all the way through. Pound to even thickness if needed.
- Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
- Add spinach and sauté until wilted and most moisture evaporates, about 3 minutes. Season lightly with salt and pepper. Set aside to cool.
- In a mixing bowl, combine softened cream cheese, shredded mozzarella, Italian seasoning, smoked paprika, and sautéed spinach and garlic. Mix until creamy and spreadable.
- Spoon the filling evenly into each chicken pocket. Use toothpicks if needed to secure openings.
- Season the outside of the stuffed chicken breasts with salt and pepper. Optionally brush with a little olive oil.
- Place stuffed chicken breasts in the air fryer basket with space between them. Cook at 375°F (190°C) for 18-22 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C) and outside is golden brown.
- Let the chicken rest for 5 minutes before slicing to keep juices locked in.
