Ingredients

  • 4 large garlic bulbs
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 4 cups (960 ml) vegetable broth
  • ½ cup (120 ml) heavy cream
  • 1 cup (240 ml) milk (whole or 2%)
  • Salt and freshly cracked black pepper, to taste
  • 1 teaspoon fresh thyme, chopped (optional)
  • ¼ cup (25 g) grated Parmesan cheese (optional)

Instructions

  1. Preheat your air fryer to 390°F (200°C). Slice the tops off the garlic bulbs to expose the tops of the cloves. Drizzle each bulb with about 1 tablespoon of olive oil, making sure it seeps into the cloves. Place the bulbs cut-side up in the air fryer basket and roast for 20 minutes until cloves are golden brown and soft.
  2. While the garlic roasts, heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the diced onion and cook, stirring occasionally, until translucent and fragrant, about 5 minutes.
  3. Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins into the saucepan with the onions.
  4. Pour in the vegetable broth and add fresh thyme if using. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Remove thyme sprigs if whole ones were added. Use an immersion blender to puree the soup until smooth and silky. If using a countertop blender, blend in batches carefully.
  6. Return the pureed soup to low heat. Stir in the heavy cream and milk. Warm gently without boiling. Season with salt and freshly cracked black pepper to taste.
  7. If desired, stir in grated Parmesan cheese until melted and combined.
