- 1 pound boneless, skinless chicken thighs
- 1 cup fresh or frozen cranberries
- 1/2 cup orange juice
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Season the chicken thighs with salt and pepper.
- Heat a large skillet over medium-high heat and add the chicken. Cook for 3-4 minutes per side until browned.
- Add the cranberries, orange juice, brown sugar, garlic, and thyme to the skillet. Stir to combine.
- Reduce heat to low, cover and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the Cranberry Orange Chicken immediately, garnished with fresh thyme if desired.
