- 1 tbsp Baking Powder (ensure it’s fresh)

- 1 teaspoon Salt
- 2 tbsp Grated Orange Zest (can substitute with lemon zest)
- 1.5 cups Fresh Cranberries (can use frozen if fresh aren’t available)
- 0.5 cups Unsalted Butter (softened)
- 1 cup Sugar (brown sugar can be used)
- 2 large Eggs
- 0.5 cups Orange Juice (fresh is best)
- 1 teaspoon Vanilla Extract
- 1 cup Powdered Sugar
- 2 tbsp Orange Juice (fresh is best)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9″x5″ loaf pan.
- Whisk together flour, baking powder, baking soda, salt, grated orange zest, and 1½ cups of fresh cranberries in a medium bowl.
- Cream softened butter and sugar in a stand mixer until light and fluffy. Add large eggs one at a time, mixing until just combined.
- Combine the wet ingredients by adding orange juice and vanilla extract, mixing until well blended.
- Gently fold in the dry flour mixture by hand until just moistened.
- Pour the batter into the prepared loaf pan and scatter the remaining ½ cup of cranberries on top.
- Bake for about 1 hour. Check for doneness by inserting a toothpick into the center.
- Cool the bread for 5-10 minutes before inverting it to remove from the pan.
- Prepare the glaze by whisking together powdered sugar and a bit of orange juice until smooth. Drizzle over the warm bread.
