  • 2 tbsp Grated Orange Zest (can substitute with lemon zest)
  • 1.5 cups Fresh Cranberries (can use frozen if fresh aren’t available)
  • 0.5 cups Unsalted Butter (softened)
  • 1 cup Sugar (brown sugar can be used)
  • 2 large Eggs
  • 0.5 cups Orange Juice (fresh is best)
  • 1 teaspoon Vanilla Extract
  • 1 cup Powdered Sugar
  • 2 tbsp Orange Juice (fresh is best)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9″x5″ loaf pan.
  2. Whisk together flour, baking powder, baking soda, salt, grated orange zest, and 1½ cups of fresh cranberries in a medium bowl.
  3. Cream softened butter and sugar in a stand mixer until light and fluffy. Add large eggs one at a time, mixing until just combined.
  4. Combine the wet ingredients by adding orange juice and vanilla extract, mixing until well blended.
  5. Gently fold in the dry flour mixture by hand until just moistened.
  6. Pour the batter into the prepared loaf pan and scatter the remaining ½ cup of cranberries on top.
  7. Bake for about 1 hour. Check for doneness by inserting a toothpick into the center.
  8. Cool the bread for 5-10 minutes before inverting it to remove from the pan.
  9. Prepare the glaze by whisking together powdered sugar and a bit of orange juice until smooth. Drizzle over the warm bread.
