- 1.5 cups sugar
- 0.5 cup fine sugar
Instructions
- Cook the Jam: In a saucepan, combine fresh cranberries, sugar, and vanilla. Cook over medium heat for about 15 minutes, stirring occasionally, until thickened. Let cool completely before using.
- Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until well blended. Press this mixture firmly into the bottom of a springform pan. Spread half the cranberry jam evenly over the crust.
- Mix the Filling: In a large bowl, beat the softened cream cheese and granulated sugar together. Add in sour cream, vanilla, eggs, cornstarch, and heavy cream. Scrape in vanilla bean seeds and mix until creamy. Carefully pour this filling over the cranberry jam layer.
- Bake it Right: Preheat your oven to 325°F. Place the springform pan in a water bath and bake for 70 to 75 minutes. The filling should be set but still slightly wobbly in the center. Allow to cool, then refrigerate for at least four hours.
- Top with Jam: Once chilled, gently spread the remaining cranberry jam on top of the cheesecake. For the mousse, mix softened cream cheese with melted white chocolate, then fold in whipped topping until smooth. Spread this fluffy mousse over the cheesecake.
- Decorate and Enjoy: Get creative by decorating with mousse swirls or topping with candied cranberries.
