- 2 medium Carrots (chopped)
- 2 stalks Celery (chopped)
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
- 4 cups Vegetable Broth
- 1 can Tomatoes (diced, canned or fresh)
- 2 tablespoons Olive Oil (for sautéing)
- 1 teaspoon Cumin (adjust to taste)
- 1 teaspoon Turmeric (adjust to taste)
- 2 tablespoons Parsley (fresh, chopped)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrots; cook until softened, about 5 minutes.
- Stir in minced garlic, cumin, and turmeric; sauté until fragrant, about 1 minute.
- Add lentils, vegetable broth, and tomatoes; bring to a boil.
- Reduce heat to low, cover, and let simmer for 45 minutes or until lentils are tender.
- If needed, add a splash of water to achieve desired thickness.
- Ladle soup into bowls, garnish with fresh parsley and a drizzle of olive oil.
