Instructions

  1. Gather all your ingredients. Rinse and drain the black beans and black-eyed peas thoroughly. Dice the avocados and bell pepper, halve the cherry tomatoes, and finely chop the red onion and cilantro.
  2. In a large mixing bowl, combine the black beans, black-eyed peas, sweet corn, diced avocados, halved cherry tomatoes, diced bell pepper, red onion, and chopped cilantro. Mix gently with a spatula.
