Instructions
- Gather all your ingredients. Rinse and drain the black beans and black-eyed peas thoroughly. Dice the avocados and bell pepper, halve the cherry tomatoes, and finely chop the red onion and cilantro.
- In a large mixing bowl, combine the black beans, black-eyed peas, sweet corn, diced avocados, halved cherry tomatoes, diced bell pepper, red onion, and chopped cilantro. Mix gently with a spatula.
- In a separate bowl, whisk together the lime juice, olive oil, and a sprinkle of salt and pepper.
- Pour the dressing over the bean and vegetable mixture, ensuring everything is coated without mashing the ingredients. Then carefully toss until combined.
- Taste the dip and adjust seasoning with more salt, pepper, or lime juice as desired.
- Let the dip chill in the refrigerator for about 30 minutes before serving.
