- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 4 tbsp (60g) unsalted butter
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp chili powder
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- Salt and black pepper, to taste
- 1 tbsp olive oil
Instructions
- Cut chicken into 1-inch bite-sized pieces. Toss in a mixing bowl with olive oil, smoked paprika, chili powder, salt, and pepper until evenly coated.
- Heat a large skillet over medium-high heat. Add chicken pieces in a single layer (cook in batches if needed). Sear for 3-4 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- Reduce heat to medium-low. Add butter to the same pan and melt. Stir in minced garlic and cook until fragrant, about 30 seconds to 1 minute.
- Pour in lemon juice and sprinkle chopped parsley. Stir quickly to combine.
- Return chicken bites to the pan and toss in the buttery garlic sauce until well coated and glistening.
- Taste and adjust salt and pepper if needed. Serve immediately.
