- 4 large Russet potatoes (peeled and diced)
- 1 cup freshly grated parmesan cheese
- 1/2 cup milk (or plant-based milk)
- 1/4 cup unsalted butter (for richness)
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 tbsp olive oil (for sautéing)
- 1 large onion (diced)
- 2 cloves garlic (minced)
- 2 large carrots (diced)
- 2 stalks celery (diced)
- 1 lb ground beef (or ground turkey/lentils)
- 1 cup beef broth (or vegetable broth)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh rosemary (finely chopped)
- 1 cup frozen peas
Instructions
- Place the potatoes in a pot and cover with cold water. Turn the heat to high and bring to a boil. Cook for 13-15 minutes, until soft when pierced with a fork.
- Drain the potatoes, return to the pot. Add parmesan cheese, milk, butter, salt, and pepper. Mash until creamy.
- Preheat oven to 400°F (200°C). Heat olive oil in a sauté pan, add onion and garlic, and sauté for about a minute.
- Stir in carrots, celery, and ground beef. Cook for 8-10 minutes until the meat is browned.
- Drain excess fat, then mix in broth, tomato paste, Worcestershire sauce, rosemary, peas, salt, and pepper.
- Spread the meat mixture in the pan, then top with the mashed potatoes, smoothing it out.
- Bake the Cottage Pie for 25-30 minutes, until the top is golden brown and bubbly.

- This dish can be made ahead and refrigerated before baking.
- Feel free to substitute ground beef with turkey or lentils for a vegetarian option.
