  • 4 large Russet potatoes (peeled and diced)
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup milk (or plant-based milk)
  • 1/4 cup unsalted butter (for richness)
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 tbsp olive oil (for sautéing)
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 2 large carrots (diced)
  • 2 stalks celery (diced)
  • 1 lb ground beef (or ground turkey/lentils)
  • 1 cup beef broth (or vegetable broth)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh rosemary (finely chopped)
  • 1 cup frozen peas

Instructions

  1. Place the potatoes in a pot and cover with cold water. Turn the heat to high and bring to a boil. Cook for 13-15 minutes, until soft when pierced with a fork.
  2. Drain the potatoes, return to the pot. Add parmesan cheese, milk, butter, salt, and pepper. Mash until creamy.
  3. Preheat oven to 400°F (200°C). Heat olive oil in a sauté pan, add onion and garlic, and sauté for about a minute.
  4. Stir in carrots, celery, and ground beef. Cook for 8-10 minutes until the meat is browned.
  5. Drain excess fat, then mix in broth, tomato paste, Worcestershire sauce, rosemary, peas, salt, and pepper.
  6. Spread the meat mixture in the pan, then top with the mashed potatoes, smoothing it out.
  7. Bake the Cottage Pie for 25-30 minutes, until the top is golden brown and bubbly.
