Description
A light, high-protein, crustless quiche made with fresh spinach, creamy cottage cheese, and eggs. Perfect for breakfast, brunch, or dinner. Low in carbs and packed with flavor.
Ingredients

- 1 tbsp oil
- 1 small onion (diced)
- ½ bell pepper (diced)
- 2 cups fresh baby spinach (chopped)
- 1½ cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar cheese (or cheddar + mozzarella mix)
- ½ cup milk
- ½ tsp garlic powder
- 1 tsp Italian seasoning
- Salt & black pepper (to taste)
Instructions
- Preheat oven to 350°F (175°C)
- Heat oil in a skillet over medium heat
- Sauté diced onion and bell pepper for 3–4 minutes until softened
- Add spinach and cook until wilted (2–3 minutes)
- Season cooked vegetables with salt, pepper, and garlic powder; let cool
- Whisk eggs, milk, cottage cheese, Italian seasoning, salt, and pepper in a bowl
- Add shredded cheese to the egg mixture and mix well
- Fold cooled vegetables into the egg-cheese mixture
- Grease a 9-inch baking dish and pour in the quiche mixture
- Bake for 40–45 minutes until center is set and top is lightly golden
- Let cool before slicing and serving
