- 7 large eggs
- 1 cup cottage cheese
- 1 cup shredded Colby Jack cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Cooking oil spray
Instructions
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, whisk together the eggs. Add in bacon bits, cottage cheese, shredded cheese, salt, and pepper; mix until well combined.
- Generously spray a 12-cup muffin pan with cooking oil and evenly divide the egg mixture among the cups.
- Place a pan with water on the lower rack of the oven to maintain moisture while baking. Bake the muffins for 23–25 minutes or until a toothpick inserted comes out clean.
- Let them cool slightly before removing from the pan.
