Irresistible Corned Beef Hash with Perfectly Crispy Edges


Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cups diced cooked corned beef
  • 2 cups diced cooked potatoes
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh parsley, roughly chopped
  • 4 large poached eggs
  • 4 large fried eggs

Instructions

  1. In a large cast-iron skillet, warm the extra-virgin olive oil over medium-high heat. Sauté the diced onions and bell peppers for about 3 to 4 minutes, until the onions become translucent and soft.
  2. Add the diced corned beef and cooked potatoes to the skillet. Stir everything together gently, then press down with a spatula to flatten the mixture in the pan. Cook for 3 to 4 minutes without stirring to help the bottom become crispy.
  3. Carefully flip the hash using a spatula and let it cook on the other side for another couple of minutes. Stir in the parsley, kosher salt, and freshly ground black pepper.
  4. Enjoy your corned beef hash as is, or top with poached or fried eggs.
