Irresistible Corned Beef Hash with Perfectly Crispy Edges

- 2 tablespoons extra-virgin olive oil
- 2 cups diced cooked corned beef
- 2 cups diced cooked potatoes
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup fresh parsley, roughly chopped
- 4 large poached eggs
- 4 large fried eggs
Instructions
- In a large cast-iron skillet, warm the extra-virgin olive oil over medium-high heat. Sauté the diced onions and bell peppers for about 3 to 4 minutes, until the onions become translucent and soft.
- Add the diced corned beef and cooked potatoes to the skillet. Stir everything together gently, then press down with a spatula to flatten the mixture in the pan. Cook for 3 to 4 minutes without stirring to help the bottom become crispy.
- Carefully flip the hash using a spatula and let it cook on the other side for another couple of minutes. Stir in the parsley, kosher salt, and freshly ground black pepper.
- Enjoy your corned beef hash as is, or top with poached or fried eggs.
