Instructions
- Preheat your oven to 375°F (190°C).
- Place the pre-made pie crust in a 9-inch pie dish and fit it snugly.
- Line the crust with parchment paper and fill with pie weights or dried beans, then bake for 10 minutes.
- Sauté zucchini in olive oil for 3-4 minutes, add corn, season, and let cool.
- Whisk together eggs and heavy cream, then stir in goat cheese, basil, lemon zest, and lemon juice.
- Combine the sautéed corn and zucchini with the egg mixture, stirring well.
- Pour the filling into the pre-baked crust evenly.
- Bake for 35-40 minutes until top is golden and filling is set.
