A quick and kid-approved homemade version of McGriddle bites featuring sweet pancake pockets filled with savory sausage and melted cheese. Perfect for busy mornings and customizable to your dietary needs.

- 1 cup all-purpose flour (120g)
- 1 teaspoon baking powder
- 1 tablespoon granulated sugar
- A pinch of salt
- 3/4 cup milk (180ml), whole or 2%
- 1 large egg, room temperature
- 2 tablespoons butter, melted (unsalted preferred)
- 1 tablespoon maple syrup
- 6 breakfast sausage links or patties (about 6 ounces / 170g)
- 3 slices cheddar cheese, cut in half
Instructions
- Cook the sausage: Heat skillet over medium heat. Slice sausage links into 1-inch rounds if using links. Cook sausage pieces until browned and cooked through, about 4-5 minutes per side. Remove and set aside.
- Make the pancake batter: In one bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, beat egg with milk, melted butter, and maple syrup until smooth. Pour wet ingredients into dry and stir just until combined; lumps are okay.
- Cook the pancake bites: Wipe skillet clean and add butter or cooking spray. Heat over medium-low heat. Drop tablespoon-sized dollops of batter (about 1-inch diameter) onto skillet. Cook until bubbles form on surface, about 2 minutes, then flip and cook other side until golden, 1-2 minutes. Repeat until batter is used.
- Assemble the bites: Layer one pancake, half a slice of cheddar cheese, and a piece of cooked sausage. Top with another pancake and gently press. For melty cheese, heat assembled bites in skillet over low heat with lid on for 1-2 minutes.
- Serve warm and enjoy. Leftovers reheat well in toaster or microwave.
