Ingredients

  • 1 bag frozen chopped spinach (10 oz) thawed and squeezed dry
  • 1 block cream cheese (8 oz) softened
  • 1/2 cup grated Parmesan
  • 1/4 cup mayo
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • pinch red pepper flakes (optional)
  • 1 sheet puff pastry thawed but still cold
  • 1 egg for brushing

Instructions

  1. In a bowl, combine cream cheese, Parmesan, mayo, garlic powder, onion powder, and black pepper. Add spinach and mix until even.
  2. Flour your counter and roll out the puff pastry. Spread the spinach mixture over it, leaving one long side empty.
  3. Roll the pastry tightly like a jelly roll. Wrap in plastic and refrigerate for 30 minutes.
  4. Preheat the oven to 400F. Slice the log into half-inch rounds and place on a baking sheet lined with parchment.
  5. Beat the egg with a splash of water and brush it on top of the pinwheels. Bake for 15-20 minutes until puffed and golden.
