- 1 lb ground meat (beef, turkey, chicken, or plant-based crumbles)
- 1 cup canned pumpkin puree (245g)
- 2 cans beans (kidney and black beans, about 15 oz / 425g each), drained and rinsed
- 1 can diced tomatoes (14.5 oz / 411g)
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken or vegetable broth (240ml), low-sodium preferred
- 2 tbsp olive oil
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- ½ tsp cinnamon
- Salt and pepper to taste
- Optional toppings: shredded cheddar, sour cream, chopped green onions, cilantro
Instructions
- Prep your ingredients: chop the onion and mince the garlic. Open your cans and get your spices ready.
- Heat 2 tablespoons olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add garlic and sauté for another minute until fragrant.
- Add the ground meat to the pot. Break it up with a spoon and cook until no longer pink, about 6-8 minutes. Drain excess fat if desired.
- Sprinkle in chili powder, cumin, smoked paprika, cinnamon, salt, and pepper. Stir constantly for 1-2 minutes to toast the spices and bring out their flavor.
- Pour in diced tomatoes, drained beans, pumpkin puree, and broth. Stir until well combined.
- Bring chili to a gentle boil, then reduce heat to low and simmer uncovered for about 20 minutes, stirring occasionally. Add more broth or water if chili becomes too thick.
- Taste and adjust seasoning as needed. Serve topped with your favorite garnishes such as shredded cheddar, sour cream, green onions, or cilantro.
