  • 1 lb ground meat (beef, turkey, chicken, or plant-based crumbles)
  • 1 cup canned pumpkin puree (245g)
  • 2 cans beans (kidney and black beans, about 15 oz / 425g each), drained and rinsed
  • 1 can diced tomatoes (14.5 oz / 411g)
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken or vegetable broth (240ml), low-sodium preferred
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar, sour cream, chopped green onions, cilantro

Instructions

  1. Prep your ingredients: chop the onion and mince the garlic. Open your cans and get your spices ready.
  2. Heat 2 tablespoons olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add garlic and sauté for another minute until fragrant.
  3. Add the ground meat to the pot. Break it up with a spoon and cook until no longer pink, about 6-8 minutes. Drain excess fat if desired.
  4. Sprinkle in chili powder, cumin, smoked paprika, cinnamon, salt, and pepper. Stir constantly for 1-2 minutes to toast the spices and bring out their flavor.
  5. Pour in diced tomatoes, drained beans, pumpkin puree, and broth. Stir until well combined.
  6. Bring chili to a gentle boil, then reduce heat to low and simmer uncovered for about 20 minutes, stirring occasionally. Add more broth or water if chili becomes too thick.
  7. Taste and adjust seasoning as needed. Serve topped with your favorite garnishes such as shredded cheddar, sour cream, green onions, or cilantro.
