  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 pound potatoes, peeled and cubed
  • 1 pound carrots, peeled and sliced
  • 1 cup frozen peas

Instructions

  1. Season beef cubes with salt and pepper. Toss with flour until coated.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches; set aside.
  3. In the same skillet, sauté onion until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Transfer beef, onion, and garlic to a slow cooker.
  5. Stir in beef broth, tomato paste, thyme, rosemary, and bay leaves.
  6. Cover and cook on low for 8 hours or on high for 4 hours.
  7. Add potatoes and carrots to the slow cooker. Continue to cook on low for 2 more hours or until vegetables are tender.
  8. Stir in peas during the last 30 minutes of cooking.
  9. Remove bay leaves before serving. This comforting crockpot beef stew is best served hot.

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
