Description

Soft, buttery cookies swirled with cinnamon-sugar filling and drizzled with sweet glaze, just like a classic cinnamon roll in cookie form.


Ingredients

  • 2¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ cup unsalted butter (melted)
  • ⅔ cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Start by getting butter really soft – I leave mine on the counter for about an hour.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until it’s light and fluffy – about 3-4 minutes.
  4. Beat in eggs one at a time, then add the vanilla extract.
  5. Gradually add your flour mixture, mixing on low speed just until everything comes together.
  6. Roll the dough between two pieces of parchment paper into a rectangle about 12×15 inches.
  7. Brush the melted butter evenly over your dough rectangle, then sprinkle the brown sugar and cinnamon mixture over it.
  8. Starting from the long edge, roll the dough into a tight log using the parchment paper.
  9. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  10. Cut your log into ½-inch slices and place them about 2 inches apart on the baking sheets.
  11. Bake for 12-14 minutes, rotating the pan halfway through.
  12. Let them rest on the baking sheet for 5 minutes before transferring to a cooling rack.
  13. Whisk together the powdered sugar, 2 tablespoons of milk, and vanilla for the glaze.
  14. Once the cookies are completely cool, drizzle the glaze over them in a zigzag pattern.
