Description
Soft, buttery cookies swirled with cinnamon-sugar filling and drizzled with sweet glaze, just like a classic cinnamon roll in cookie form.

- 2¾ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup unsalted butter (softened)
- 1½ cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ¼ cup unsalted butter (melted)
- ⅔ cup brown sugar
- 2 tablespoons ground cinnamon
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Start by getting butter really soft – I leave mine on the counter for about an hour.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until it’s light and fluffy – about 3-4 minutes.
- Beat in eggs one at a time, then add the vanilla extract.
- Gradually add your flour mixture, mixing on low speed just until everything comes together.
- Roll the dough between two pieces of parchment paper into a rectangle about 12×15 inches.
- Brush the melted butter evenly over your dough rectangle, then sprinkle the brown sugar and cinnamon mixture over it.
- Starting from the long edge, roll the dough into a tight log using the parchment paper.
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cut your log into ½-inch slices and place them about 2 inches apart on the baking sheets.
- Bake for 12-14 minutes, rotating the pan halfway through.
- Let them rest on the baking sheet for 5 minutes before transferring to a cooling rack.
- Whisk together the powdered sugar, 2 tablespoons of milk, and vanilla for the glaze.
- Once the cookies are completely cool, drizzle the glaze over them in a zigzag pattern.

- Ensure butter is soft but not melted for the best dough consistency.
- Chill the dough if it feels too soft to cut.
- Let glaze set before stacking or storing cookies.
