  • 1.5 lbs flank or skirt steak
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 4 cups cooked white or brown rice
  • 1 (15 oz) can black beans, rinsed and drained (optional)
  • 1 cup corn (optional)
  • 1 cup diced tomatoes or pico de gallo
  • 2 avocados, sliced or 1 cup guacamole
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup thinly sliced red onion
  • Jalapeño slices (optional)
  • Extra lime wedges for serving

Instructions

  1. Whisk together marinade ingredients: chopped cilantro, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper.
  2. Pour marinade over the steak in a resealable bag or shallow dish. Marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Grill or sear the steak over medium-high heat for 4–5 minutes per side, until desired doneness. Let the steak rest before slicing.
  4. Prepare the rice and chop all desired toppings while the steak cooks.
  5. Assemble the bowls: layer rice, sliced steak, black beans, corn, tomatoes, avocado, red onion, and jalapeños (if using).
  6. Drizzle with extra cilantro-lime dressing or a squeeze of fresh lime juice. Serve immediately.

Notes

  • For a spicier bowl, add jalapeños or a dash of hot sauce.
  • Swap steak for grilled chicken, shrimp, grilled portobello mushrooms, or roasted sweet potatoes for variations.
