- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 yellow bell peppers, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth
- Juice of 1 lime
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and season with salt and pepper. Cook for 5-7 minutes, or until the chicken is lightly browned on all sides.
- Add the yellow bell peppers, onion, and garlic to the skillet. Cook for 3-4 minutes, stirring frequently, until the vegetables are softened.
- Stir in the cumin, chili powder, oregano, smoked paprika, and cayenne pepper. Cook for 1 minute, or until the spices are fragrant.
- Pour in the chicken broth and lime juice. Bring the mixture to a simmer and let it cook for 10-15 minutes, or until the sauce has thickened and the chicken is cooked through.
- Taste and adjust seasoning as needed.
