Our chuck steak recipe turns one of the most underrated cuts of beef into a standout. It’s affordable, packed with beefy flavor, and when cooked the right way, incredibly satisfying.
Ingredients

- 1 lb chuck steak
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon coarse black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon mustard powder
- ½ teaspoon sweet paprika
- ½ teaspoon brown sugar
Instructions
- Remove the steak from the refrigerator 30 minutes before cooking to bring it to room temperature.
- Add salt, black pepper, garlic powder, onion powder, mustard powder, paprika, and brown sugar to a bowl.
- Mix the ingredients to create a steak seasoning or rub.
- Pat the steak dry with a paper towel on both sides.
- Sprinkle the seasoning over the steak and press it into the meat.
- Season both sides of the steak and let it marinate for at least 15 minutes while it comes to room temperature.
- Heat a cast-iron pan or large frying pan over medium heat until it begins to smoke.
- Add the olive oil to the pan, then place the chuck steak in it. Cook for 5-6 minutes and flip to the other side.
- Cook for an additional 5-6 minutes, or until the steak reaches an internal temperature of 125 degrees for medium-rare.
- Once you reach your desired temperature, remove from the heat and rest for 5-10 minutes to allow the juices to redistribute.
- Slice on a bias against the grain and serve with your favorite vegetables.
