- 1/2 cup unsweetened dark cocoa powder

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini, drained
- 1 and 1/4 cups dark chocolate chips, divided
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8-inch square baking dish and line it with parchment paper.
- In a large bowl, whisk together the whole wheat flour, unsweetened dark cocoa powder, sugar, baking powder, baking soda, and salt.
- Create a well in the center of the dry ingredients and add the canola oil, egg, and vanilla extract. Stir until fully combined.
- Fold in the shredded and drained zucchini, ensuring it is evenly distributed. Stir in 1 cup of the dark chocolate chips until well incorporated.
- Spread the thick batter evenly into the prepared baking dish. Sprinkle the remaining 1/4 cup dark chocolate chips over the top.
- Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the brownies to cool in the pan for at least 30 minutes before lifting them out and cutting into 9 squares.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days.
