Decadent Chocolate Strawberry Cake That’ll Wow Your Guests

- 1 cup Whole buttermilk
- 3 large Eggs
- 2 teaspoons Vanilla extract
- 1 cup Unsalted butter
- 4 cups Confectioners’ sugar
- 1 cup Chopped fresh strawberries
- 8 ounces Semi-sweet chocolate
- 1 cup Heavy whipping cream
- 1 cup Fresh strawberries
Instructions
- Preheat your oven to 350°F. Prepare your cake pans by coating them with butter, spray, and lining the bottoms with parchment paper for easy release.
- Combine the unsweetened cocoa powder with boiling water in a bowl. Stir well until fully dissolved then set aside to cool down.
- In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, and salt until evenly combined.
- Gradually mix the wet ingredients—vegetable oil, buttermilk, eggs, vanilla extract, and cooled cocoa mixture—into the dry ingredients. Stir until just combined for a smooth batter.
- Divide the cake batter evenly between your prepared pans. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely.
- For the strawberry buttercream, beat the softened unsalted butter with salt and confectioners’ sugar until light and fluffy. Gently fold in the chopped fresh strawberries.
- Once cakes are cool, frost the top of one layer with the strawberry buttercream, place the second layer on top, and frost the top and sides generously. Chill until ready to serve.
- To make the ganache, heat the heavy whipping cream in a saucepan until steaming, then pour it over the chopped semi-sweet chocolate. Whisk until smooth, then pour over the frosted cake.
- Finally, decorate with fresh strawberries on top. Allow the ganache to set before slicing and serving.
