- 200 ml Heavy Cream (Use coconut cream for dairy-free option)
- 50 g Chopped Hazelnuts (For added texture in ganache)
- 200 g Cream Cheese (Opt for full-fat for best results)
- 100 g Hazelnut Butter (Homemade from processed hazelnuts)
- 1 g Salt (Enhances overall flavors)
- 1 tsp Vanilla (Recommended for depth of flavor)
- 50 g Brown Sugar (Adds sweetness)
- 200 ml Heavy Cream (for mousse) (Ensure it’s cold to achieve proper texture)
Instructions
- Preheat your oven to 350°F. In a food processor, grind the chocolate sandwich cookies and blanched hazelnuts together. Combine with melted butter and powdered sugar until you reach a wet sand consistency. Firmly press the mixture into a 10” tart pan and bake for 12 minutes. Allow to cool completely.
- Finely chop the dark and milk chocolate. Heat the heavy cream in a saucepan until steaming, then pour it over the chopped chocolate. Let it rest for a minute before stirring until smooth and glossy. Fold in the chopped hazelnuts and carefully pour the ganache into the cooled crust.
- Toast the hazelnuts on a baking sheet for about 10 minutes until fragrant. Let them cool, then process in a food processor until they form a creamy paste. Set aside to cool further.
- In a mixing bowl, beat the cream cheese until smooth. Add in the brown sugar, salt, and a splash of vanilla, mixing until combined. Incorporate the hazelnut butter, then in a separate bowl, whip the heavy cream until it reaches soft peaks. Gently fold the whipped cream into the cream cheese mixture until fluffy.
- Spread the hazelnut mousse over the ganache layer in the crust. Cover the tart and refrigerate for at least 4 hours or overnight for the best results.
