- 2 cups ripe bananas
- 2.5 tsp pure vanilla extract
- 1 tbsp white or cider vinegar
- 0.25 cups oil or milk of choice
- 2/3 cup pure maple syrup, honey, or agave
- 1.75 cups spelt, white, or oat flour
- 0.5 cups cocoa powder
- 2 tbsp dutch cocoa or additional regular
- 1 tsp baking soda
- 0.75 tsp baking powder
- 0.75 tsp salt
- 0.5 cups optional chocolate chips
- 8 oz cream cheese
- 1/3 cup powdered sugar or erythritol or 1/8 tsp uncut stevia
- 3.5 tbsp cornstarch
Instructions
- Bring the cream cheese to room temperature. In a mixing bowl, beat together the cream cheese, powdered sugar, and cornstarch until smooth and creamy.
- Preheat your oven to 350°F (175°C) and grease or line a 9×5 loaf pan with parchment paper.
- In a large bowl, whisk together all the dry ingredients for the banana bread.
- In another bowl, mash the ripe bananas and stir in the oil, maple syrup, vanilla extract, and vinegar until well mixed.
- Gently fold the banana mixture into the dry ingredients until just combined.
- Pour about 2/3 of the batter into the prepared loaf pan, smooth it out, and spread the cream cheese filling on top.
- Cover the cream cheese filling with the remaining batter.
- Sprinkle additional chocolate chips on top if desired.
- Bake in the preheated oven for about 50 minutes.
- Allow the bread to cool completely at room temperature before refrigerating overnight.
